Vegetable Lentil Soup

Veg/Vegan Lentil Soup.

Saute' Mir Poix.

1 large onion.
4 large carrots.
4 Ribs celery.
4 Cloves garlic.
2t Cumin.
1t Curry powder.
1t Thyme.
28oz Diced Tomato.
1C Dried lentils.
3Pt Veg stock. (or Chix stock if not vegan).
1t Red pepper flakes.
1C Collards, Chopped.
1 lemon, juiced and zested.

Low Boil.
When veg is cooked, puree' two cups in blender then return to pot and low heat.
